Description

Shrimp take a bath in melted butter flavored with garlic, rosemary, Italian parsley and served with a piece of French bread.

Ingredients

  • 2 sticks Unsalted Butter, Softened
  • 3 cloves Garlic, Very Finely Chopped
  • 1 Tablespoon Plus 2 Teaspoons Flat-leaf Parsley, Chopped, Divided
  • 1-½ teaspoon Lemon Zest
  • 1 teaspoon Freshly Squeezed Lemon Juice
  • ½ teaspoons Thyme, Finely Chopped
  • ½ teaspoons Red Pepper Flakes
  • 1 dash Salt And Pepper, To Taste
  • 3 pounds Shrimp, Deveined And Peeled With Tails On
  • 1 Tablespoon Sliced Basil

Preparation

Preheat the oven to 450°F. In a medium bowl, mix the butter with the garlic, 2 teaspoons of parsley, lemon zest, lemon juice, thyme, and red pepper flakes. Season with salt and pepper.

In a large gratin dish, arrange the shrimp, tails up, in a circular pattern. Dot the shrimp with the flavored butter and roast for about 10 minutes, until the shrimp are pink and the butter is bubbling. Sprinkle the shrimp with the remaining 1 tablespoon of chopped parsley and basil leaves. Serve hot with bread.

Just made this last night. Easy, fast, and delicious! My only problem was the shrimp would lay on the side, so I had to slit the back open and then they would stand up. I served mine on top of a bed of angel hair pasta, and it was divine. Thanks for sharing!!
