Description

Meatless Muffalettas (and you won’t miss the meat!).

Ingredients

  • 2 cloves Garlic (medium)
  • ¼ cups Capers
  • 1 cup Drained Ripe Black Olives
  • 1 cup Drained Pimento-stuffed Salad Olives
  • 2 Tablespoons Red Wine Vinegar
  • 2 teaspoons Dried Oregano
  • ½ cups Extra Virgin Olive Oil
  • ½ cups Finely Chopped Celery Hearts
  • 4 whole Portuguese Rolls, Split
  • 4 slices Each (about 9 Ounces Total) Mozzarella, Provolone, And Pepper Jack
  • ½ whole Red Onion, Thinly Sliced
  • 1 can (14 Oz. Size) Quartered Artichoke Hearts, Drained And Halved
  • ¾ cups Sun-dried Tomatoes Packed In Oil, Halved

Preparation

Mince garlic cloves in a food processor. Add capers; pulse to chop. Add olives, vinegar, and oregano; pulse to chop again. Turn into a medium bowl; stir in olive oil and celery. (Can be refrigerated in an airtight container for several weeks.)

When ready to make sandwiches, spread 2 tablespoons of the olive salad on the cut side of each half roll. Divide cheese evenly between bread. On the bottom half of each sandwich, arrange a portion of onion, artichoke hearts, and sun-dried tomatoes. Cap with sandwich top. Halve crosswise on the diagonal and serve.

All I can say is A-Maz-ing!

I had these when they were served at the Big Summer Potluck 2 weeks ago at Three Many Cook’s home and they were delish!
Never would I have chosen to order/make these…BOY was I wrong!!!! These will become a summer favorite in my home for sure!

Delicious sandwich. I love the layers of veggies but my favorite part is definitely the olive salad!

I’ve had many amazing sandwiches in my life, but this is easily in the top 3. That it is vegetarian is a non-factor; its sole merit lies in the taste, and this just knocked it out of the park. I’m with Tracy—I’m grabbing the ingredients for this on my next grocery trip. I’ve been dreaming about it for weeks! Okay, week-and-a-half.

Definitely a 5-mitt recipe.

This is probably the most incredible sandwich I’ve ever had. I had half of one when I attended the Big Summer Potluck a couple weeks ago, and have regretted not eating the other half ever since. I stopped at the grocery store today to pick up all the ingredients to make these tonight, and I can’t wait!!
