This is one of my favorites. This is a traditional New Mexico dish. Calabacitas (ka-la-bah-seet-tas) literally means little squash. I have made this as a side dish and a main dish. This time of year is just perfect for this if you have some squash and want some comfort food. You can put cheese on top or add beans or potatoes for a fuller dish.
Cut the corn off the cob. Dice the squash, zucchini, pepper, and onion.
In a large skillet place the oil and all your chopped ingredients. Add salt and garlic to taste.
Cook uncovered until squash is tender. Serve warm.
