Description

A non-traditional falafel made with pinto beans and topped with a creamy avocado sauce.

Ingredients

  • FOR THE AVOCADO SAUCE:
  • 1 whole Ripe Avocado, Mashed
  • 2 Tablespoons Sour Cream
  • 1 Tablespoon Minced Red Onion
  • ¼ teaspoons Ground Cumin
  • ¼ teaspoons Kosher Salt
  • 2 teaspoons Fresh Lime Juice
  • FOR THE FALAFEL:
  • 1 can (15 Oz. Can) Pinto Beans, Drained And Rinsed
  • ½ cups Monterey Jack Cheese
  • ¼ cups Finely Crushed Tortilla Chips
  • 1 Tablespoon Fresh Cilantro, Finely Chopped
  • 2 Tablespoons Green Onion, Chopped
  • ¼ teaspoons Ground Cumin
  • ¼ teaspoons Kosher Salt
  • 1 whole Egg White
  • 2 teaspoons Olive Oil
  • 2 whole Pitas, Cut In Halves
  • Spring Greens, To Serve

Preparation

To make the avocado sauce, combine avocado, sour cream, red onion, cumin, salt, and lime juice and stir to completely combine. Keep in the refrigerator while making the falafel.

Add drained and rinsed beans to a bowl and roughly mash with a fork. Add cheese, tortilla chips, cilantro, green onion, cumin, salt, and egg to the beans and stir to incorporate well. Shape the mixture into four even oval discs, about 1 inch thick.

Heat oil over medium heat and add falafel patties. Heat about 3 minutes on each side, or until lightly golden. When they are finished, place each patty into a pita half and top with avocado spread and spring greens. Enjoy!

Absolutely delicious! I will definitely be making this again. The avocado sauce makes it! We also ate with sliced tomatoes.
