Description

A creamy, comfort food that is somewhat healthy for you. Buttered Red Lentils.

Ingredients

  • 2 cups Water Or Broth
  • ¾ cups Red Lentils
  • 3 Tablespoons Butter
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ cups Parmesan Cheese

Preparation

Bring water to a boil. Add red lentils and let them simmer until just tender, about 20 minutes. You don’t want to overcook your red lentils or they will turn to mush. Add more water, in ¼-cup increments, as needed, if the water absorbs before the lentils are done. You don’t want them to dry out while cooking. Once your water is absorbed and lentils are tender, remove from the heat and stir in butter. Season with salt and pepper. Add in parmesan cheese. Serve.

For something so ridiculously easy, this is fantastic! Will definitely be making again. The parmesan (fresh ground, not out of the green can) melds so incredibly well with the lentils. I added a bit of sour cream and some cilantro as garnish but it did not need it and I’m not sure I’d do it again.
