Description

Quick, easy, nutritious, and dragonbreathy delish!

Ingredients

  • 2 cans Garbanzo Beans (chickpeas)
  • 3 cloves Garlic (to Taste, I Really Really Like Garlic)
  • ¼ cups Lemon Juice To Taste
  • 3 Tablespoons Extra Virgin Olive Oil (to Desired Texture)
  • 3 teaspoons Cayenne Pepper, Or To Taste
  • 2 teaspoons Salt, Or To Taste
  • 1 teaspoon Black Pepper To Taste

Preparation

Liberate garlic cloves from their papery skins, drop in a blender or food processor.

Open up cans of garbanzo beans (not to be confused with cans of whoop-ass), rinse beans in a strainer, drop in a blender or food processor.

Add lemon juice – go cautiously! You can always add more, but you really can’t take away.

Add spices – see above cautionary statement.

Turn on your blender or food processor. While it’s whirring, drizzle in olive oil till you get the consistency you desire.

Serve cold or room temp with chips, crackers, veggies, whatevs.

**This is called “Almost Hummus” and not “Actually Hummus” because I don’t include a key ingredient: tahini. It’s this sesame paste that I have tried and tried to enjoy, and I just can’t. So I nix it, thus making this dish technically not hummus.**

I made this tonight for a snack…. it is GREAT! I can’t have oil, so I used water in place of the olive oil. Since I don’t know what it should be like w/ the oil, I declare it wonderful with water.
