Description

An easy, healthy recipe for black bean tostadas that’s ready in 10 minutes! Perfect for Cinco de Mayo or a quick weeknight dinner.

Ingredients

  • FOR THE TOSTADAS:
  • 1 Tablespoon Olive Oil
  • ½ whole Small Red Onion
  • ¼ teaspoons Kosher Salt
  • 15 ounces, weight Canned Low-Sodium Black Beans, Rinsed And Drained
  • ⅓ cups Prepared Salsa, Plus Additional For Serving
  • 4 whole 6-Inch Size Corn Tortillas
  • OPTIONAL TOPPINGS:
  • Diced Avocado
  • Sour Cream
  • Fresh Cilantro
  • Fresh Lime Juice
  • Shredded Cabbage
  • Shredded Cheese
  • Diced Tomatoes

Preparation

Preheat the oven to 400 F. In a medium saucepan, heat the olive oil over medium high. Dice the onion, then add it and the salt into the pan and cook for 2 minutes, until just beginning to soften. Add the black beans and salsa and stir to coat with the oil and onions. Cook, stirring periodically, until heated through, about 4 minutes. Mash and set aside.

Meanwhile, spread the tortillas in a single layer on a baking sheet, then place in the oven until crisp, about 6 minutes, flipping the tortillas once halfway through. Prepare any desired toppings.

To serve, spoon the black beans over the crisp tortillas, then pile on the toppings. Enjoy immediately.
