Description

This is an easy, sweet and delicious stir-fry that you can tweak to your liking. I usually make this when I need to use up ingredients from my fridge, or am stuck on what to make.

Ingredients

  • FOR THE SAUCE:
  • ½ cups Ketchup
  • 2 Tablespoons Soy Sauce
  • ½ teaspoons Salt
  • 3 Tablespoons Brown Sugar
  • 2 teaspoons Sesame Oil
  • ¼ teaspoons Cayenne Pepper
  • ¼ cups Vegetable Broth
  • ½ cups Orange Juice
  • _____
  • FOR THE STIR-FRY:
  • 1 package (12 To 14 Oz. Package) Tofu, Diced
  • 2 Tablespoons Oil
  • 2 Tablespoons Flour, Or Arrowroot Powder
  • 1 whole Onion, Chopped
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Minced Fresh Ginger
  • 2 whole Pepper (any Color), Chopped
  • 2 whole Carrots, Chopped
  • 2 cups Snow Peas
  • 1 cup Cashews

Preparation

Mix all sauce ingredients together with a whisk. Set aside.

Fry tofu bits and oil in a large pan. When tofu is browned on all sides, add flour and mix to coat. Add onion, garlic and ginger; fry until onion is translucent. Add peppers and carrots for about 3 minutes. Add snow peas and cook for 1 minute. Add sauce and stir to coat. Allow sauce mixture to thicken (takes about 3 minutes). Add cashews, and stir to coat. Serve with rice, garnish with sesame seeds. Enjoy!
