Description

Red Pesto with sun-dried tomatoes and basil. It’s vegan and only calls for 5 ingredients.

Ingredients

  • ½ cups Sun Dried Tomatoes
  • 2 cloves Garlic
  • 2 cups Fresh Basil
  • ½ cups Cashew Nuts
  • 5 Tablespoons Native Olive Oil (use Less If You Use The Oil From The Tomatoes)
  • Salt And Pepper, to taste

Preparation

Throw all ingredients into a food processor or use a bowl and hand blender. If you don’t have any of those tools, try to cut all the ingredients into very small pieces and mix and mash them together using a fork or heavy rolling pin.

Just pour the mixture into the jar and tada! You have your own little jar of lovely red pesto. Use it as pizza base, in a wrap, with pasta/zoodles or try in combination with vegetarian quesadillas.
