Description

There is no need to give up sugar in the New Year—or ever, for that matter. Let yourself enjoy these sweet and satisfying grain-free Salted Peanut Butter Cup Energy Bites made with 5 simple ingredients that you most likely already have on hand. You won’t be disappointed or deprived!

Ingredients

  • 1-½ cup Pitted Medjool Dates, Tightly Packed
  • ¾ cups Natural, Creamy Peanut Butter
  • 1 teaspoon Coconut Flour
  • ½ teaspoons Sea Salt (optional)
  • 4 ounces, weight Dark Chocolate, Roughly Chopped
  • ¾ teaspoons Coconut Oil

Preparation

In a high-power blender or food processor, pulse pitted dates and peanut butter until smooth, with only a few chunks remaining. Scrape down the sides as needed to make sure everything is well-incorporated. Add coconut flour and sea salt (if using) and pulse again until smooth.

Use a tablespoon to scoop out portions of the dough and roll it into a tight ball with your hands. The mixture will be crumbly, but should stick together with a little force. If it’s not sticky enough, add another teaspoon or two of peanut butter. Flatten the balls into discs about ½ to ¾ inch thick and lay these out on a baking sheet or cutting board. Refrigerate for 1–2 hours until firm.

Melt chocolate and coconut oil in a double-boiler until smooth. Remove the bites from the fridge and drizzle the chocolate over the top. You can also dip them halfway in the melted chocolate if you want to mix it up a little bit.

Refrigerate or freeze until chocolate has set. Serve immediately, keeping in mind that the longer the bites are out at room temperature, the more the chocolate drizzle will melt. Store them in an airtight container in the fridge or freezer. Enjoy!
