Description

Super-charge your health with this Super-Chard Wrap! This wrap is loaded with plenty of goodness and flavor!

Ingredients

  • FOR THE MEAT MIXTURE:
  • ½ cups Chopped Walnuts
  • 1 jar (16 Oz. Size) Salsa
  • 1 can (15 Oz. Size) Dark Kidney Beans, Drained
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Cumin
  • ¼ teaspoons Cayenne Pepper
  • FOR THE FILLING:
  • 1 whole Red Pepper, Stem And Seeds Removed, Chopped
  • 1 whole Green Pepper, Stem And Seeds Removed, Chopped
  • ¼ cups Finely Chopped Onion
  • 1 cup Corn
  • 1 whole Avocado (flesh, Chopped)
  • 1 Tablespoon Chopped Jalepenos (optional)
  • FOR THE WRAP ASSEMBLY:
  • 6 whole Large Swiss Chard Leaves

Preparation

1. Pulse walnuts in a food processor until finely chopped.
2. Place chopped walnuts in a skillet and cook on medium heat until slightly browned.
3. Once walnuts have browned, pour the salsa into the skillet. It is going to sizzle a little—don’t worry this is normal.
4. Stir in beans and spices and simmer for about 10-15 minutes.
5. When meat mixture is complete lay a Swiss chard leaf flat and place 1-2 tablespoons of meat in the middle of the leaf.
6. Layer on the toppings: red pepper, green pepper, onion, corn, avocado and jalapenos. Feel free to add toppings of choice. Get creative!
7. Wrap and serve!
