Description

Healthy, delicious, easy and fun to make with the children! Gluten- and dairy-free, vegan and raw.

Ingredients

  • 1-½ cup Pitted Dates
  • 1 cup Raw Pecans
  • 1 cup Raw Walnuts
  • ⅓ cups Unsweetened Cocoa Powder
  • ⅓ cups Unsweetened Almond Milk
  • 1-½ teaspoon Peppermint Extract
  • ¼ teaspoons Sea Salt
  • 1 cup Unsweetened Shredded Coconut

Preparation

Combine all of the ingredients except the shredded coconut in the food processor. Run it on high, until the mixture is smooth. You may need to run it for a few minutes, to make sure there aren’t any chunks. Take a taste before removing the Paleo peppermint fudge from the processor, to make sure it is sweet enough. If it tastes too fruity from the dates you may want to add a little more cocoa powder and mix it a bit longer. Make sure the dough is sticky enough for the coconut to stick to it. Add more milk if needed!

Put the shredded coconut in a shallow bowl. Use your hands to make small fudge balls and roll them in the coconut. They can get pretty sticky, so the easiest way to form them is to immediately throw your clump of dough into the coconut, then form it into a ball after it’s been coated. For the kids I gave them each about a quarter cup of dough on their plate, and let them decide what to do with it. One made one big ball, and the others made a few small ones. We all had fun! I think they taste best chilled. Enjoy!
