Description

Chunky Monkey by Ben & Jerry’s is one of my all time favorite Ice creams and now I CAN have it again. Well, my dairy-free, egg-free and refined-sugar-free version, anyway.

Ingredients

  • FOR THE ICE CREAM BASE:
  • 2 cans (13.5 Oz. Can) Full-fat Coconut Milk
  • 4 whole Bananas, Sliced
  • 3 Tablespoons Raw Honey
  • 1 teaspoon Vanilla
  • 1 teaspoon Lime Juice
  • FOR THE MIX-INS:
  • 1 whole Banana Cubed
  • ½ cups Dark Chocolate, Roughly Chopped
  • ½ cups Walnuts (optional)

Preparation

To make the ice cream base, blend the coconut milk, bananas, honey, vanilla, and lime juice in a blender till smooth. Pour the mixture into your ice cream maker (I recommend the old school rock salt and ice kind).

Add the mix-ins.

Follow the instructions on your ice cream maker. It will take about 30 minutes to get thick, then change the salt/ice ratio as per the ice cream maker’s instructions, cover with a towel and let it sit (not turning) for another 30 minutes to an hour.

If you don’t have an ice cream maker, pour the mixture into a freezer container. Every 20 minutes, remove from the freezer. Using electric beaters, beat the mixture to break up the ice crystals and place back in the freezer. Do this as many times as you need, till desired consistency is achieved.

Makes about 2 quarts. Recipe doubles well.

This is delicious! Absolutely love it! :) I am most definitely making this again! The only change I made was to add peanut butter to the base of the ice cream and omit the nuts. Scrumptious! Thanks for this recipe. :)
