Description

My local grocery store sells pre-cut cauliflower steaks in a variety of colors, perfect for roasting. This is such a simple dish, and can be roasted while you pan-fry your protein of choice for a quick week night meal. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, nut free, coconut free, CKD, Low Potassium, Low Sodium, Renal Diet. For Paleo and dairy free, see notes.

Ingredients

  • 1-½ pound Cauliflower Cut Into 1/2-inch Steaks
  • 2 Tablespoons Butter, Melted
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Herbes De Provence (See Tip)
  • Salt And Pepper, to taste
  • ¼ cups Shredded Cheese (I Used Lucerne Parmesan), Divided

Preparation

Preheat oven to 400ºF.

Line a large rimmed baking sheet with parchment paper and lay the cauliflower steaks out so they do not overlap.

Mix all of the remaining ingredients except the cheese. Using a pastry brush, brush the top side of the cauliflower with the herbed butter mixture, making sure to get a little of the garlic on each slice.

Bake for 20 minutes. Carefully flip the cauliflower steaks, brush the remaining herbed butter over the steaks. Lightly salt and pepper each steak. Top with half of the grated cheese.

Return to oven for 10 minutes, or until cheese is fully melted and cauliflower is fork tender. Remove from oven, and sprinkle remaining cheese over the steaks. Serve immediately.

Store leftovers in the refrigerator or freezer.

Notes:
• For Paleo and dairy free, use all olive oil and omit the cheese.
• Use any spice blend you enjoy in place of the herbes de Provence. It would be very good with a Cajun spice blend for a spicy version, for example.
