It’s the freshness of this simple, healthy salad with a delicious citrus dressing that will knock your socks off!
Once couscous is cooked, stir in a drizzle of olive oil and salt and pepper to taste.
Pile the couscous into a salad bowl. Layer on the avocado, orange and apple. Sprinkle sesame seeds and parsley on top.
Mix together all the dressing ingredients in a small bowl and pour into a small jug or jar to serve alongside the salad.
Notes: As a light meal, this dish will serve 2. As a side salad, this dish will serve 4.
