Potato salad is one of my all-time favorite things. I love it with cold cuts of all meats, steak, fresh corn, warm ham, boiled eggs, cheese. Anything. This is a flavorful, substantial version that’s delicious all on its own.
Boil the potatoes in a pot of salted water until fully cooked. Drain, and mash to your liking. Pan fry onion and chorizo over a medium heat until onion becomes slightly translucent. Turn off the stove and remove the pan from the heat. Stir in mashed potato, and soak up all the juices in the pan.
In a separate bowl, mix together the mayonnaise, sour cream, parsley, paprika and salt. Stir in the potato mixture and serve warm.
