Turkish Shepherd’s Salad

Description
A simple and fresh salad bursting with Mediterranean flavors.
Ingredients
- FOR THE SALAD:
- 3 whole Tomatoes, Diced
- 2 whole Cucumbers, Peeled And Diced
- 1 whole Green Bell Pepper, Seeded And Diced
- 1 bunch Spring Onions (Scallions), Sliced
- 1 bunch Fresh Mint, Finely Chopped
- ½ bunches Fresh Flat-leaf Parsley, Finely Chopped
- FOR THE DRESSING:
- 2 Tablespoons Extra Virgin Olive Oil
- 1 whole Lemon, Juiced
- ½ teaspoons Sea Salt
- ½ teaspoons Freshly Ground Black Pepper
Preparation
1. Mix all the salad ingredients together in a large bowl.
2. In a separate bowl add the extra virgin olive oil, lemon juice, salt and pepper.
3. Whisk together well to combine the dressing.
4. Pour the dressing over the salad and mix well to coat all the ingredients.
5. Serve immediately.
