Thinly sliced cantaloupe makes this salad sweet and smooth. It’s wonderful alone or adorned on top of a nicely grilled piece of chicken or fish.
Slice the cantaloupe into very thin strips using a mandolin or knife and add to a large bowl. Add peppers and onions to cantaloupe. In a small bowl whisk together lemon juice, red pepper flakes, honey and olive oil. Add salt and pepper to taste. Pour over cantaloupe and stir gently. Serve cold or over grilled meat.
