I’ve been making this chicken salad for years and always get compliments. It’s super easy and no-fail for a crowd-pleaser. enjoy!
1. Preheat oven to 450 degrees.
2. Cover chicken breasts with olive oil, salt and pepper.
3. Bake at 450 until juices are clear or meat thermometer reads 160 (about 30 minutes).
4. Remove chicken from oven and let cool; when cool, remove skin and cut breast meat into 1-inch chunks.
5. Dice apples, halve grapes and chop celery.
6. Mix fruit, celery and chicken together in large bowl.
7. Pour in poppy seed salad dressing and add mayonnaise; stir until thoroughly mixed.
8. Add berries and nuts if you desire
*If the mixture is too dry, add more dressing a tablespoon at a time until mixture has been lightly coated.
