A great summer recipe- tastes just like taffy apples!
Mix drained pineapple and marshmallows in a large bowl.
Put reserved juice into a saucepan. Make sauce first. Add sugar, flour, vinegar and egg to the juice and heat. Stir and cook til thickened…once it is thickened, fold in cool whip.
Let it cool (believe me…I did this once without this step and it melted all the marshmallows LOL).
While it is cooling…peel and chop apples mixing into the marshmallow/pineapple mixture to keep from browning.
Add peanuts (can add more or less). If the apples are small use more than 4 or 5. Makes a huge batch and is great for picnics! Keep refrigerated.

Cool Whip….it’s like a whipped topping that comes in a little tub and it’s frozen. You thaw it and use it. I’m not sure how it would work with just a regular can of whipped cream. Cool Whip is the brand name.

This salad isn’t what I would normally make, but it is AWESOME! I made a bunch and took it to a potluck and what a hit! Everyone wanted the recipe! Thanks Fee K.! Very simple and so good!

I’m sorry..I forgot how to log in here Cool Whip is like whipped cream…it’s got a different taste but same theory of it..so I would substitute whipped cream. Or beat some heavy whipping cream? I made this with the fat free option of cool whip and it was great.

I make this, but use cocktail peanuts!! I just love this salad!
