Avocados, cucumbers, red onions, cherry tomatoes and feta in a light, refreshing dressing!
Add all of the vegetables to a medium-sized bowl. Drizzle the lemon juice and olive oil over top. Add the salt and pepper. Toss to coat. Top with the feta and enjoy!
*To dice the avocado, I cut it in half lengthwise. Hit the pit hard with a sharp knife and pull up with the knife to remove. Take a paring knife and cut a grid without breaking through the skin. Take the knife between the meat and the skin to remove the diced pieces. Repeat with the other half.
