A light but filling salad with a yummy citrus vinaigrette. Even my husband was OK with this salad as the main course!
Cube chicken and season it with ginger, garlic powder, salt and pepper. Heat a skillet over medium heat and add the oil. Once oil is heated, add chicken and cook until all of the pieces are well browned on all sides.
Assemble salad ingredients on serving plates, top with some of the chicken and your choice of cheese.
Combine dressing ingredients in a sealable container. Shake until well mixed. Pour over salad and enjoy!
