A fresher-tasting potato salad
Dice potatoes into 1/2 inch sized pieces. Boil in salted water until tender. Rinse under cold water to stop cooking.
Mix sour cream, mayonnaise, chives and salt. Combine with warm potatoes and refrigerate.
Garnish with additional chives before serving!

Definitely! It still has the mayo flavor, just “lightened” up a bit with the sour cream…go for it !!!!!

This looks like something I might try! The potato salad I always make has boiled eggs, dill pickles, and Mayo. My husband doesn’t like sour cream, but maybe I can sneak it in without him knowing?! Ya think?
