When I was a kid I was a fussy eater. It drove my parents crazy. My Nanna used to make this really amazing potato salad. When I asked for the recipe later my mom laughed because it was so basic and simple.
Okay – So you will notice that this potato salad has no mustard, onions or other condiments except sweet pickles. This is probably one of the most basic potato salads I have ever come across. I haven’t met a kid yet who didn’t like it.
Wash, peel, and boil potatoes. I tend to check them every five minutes. You don’t want them soft, you want them this side of tender. I think I boiled mine about 10-15 minutes.
Add eggs to a pan of cold water and add about a tablespoon of salt (this helps with shell removal). Boil for 19 minutes.
When potatoes are boiled cool them down by running them under cold water for about 15 minutes and then let them sit in cold water for another 15 minutes until they are cool to the touch.
When the eggs have finished boiling, drain water and dump all 12 into a large bowl of ice. This helps the cooling process.
Once eggs and potatoes are cool to the touch chop up both into bite size pieces and add to a very large salad bowl.
Chop up 1/2 of a jar of sweet pickles into bite size pieces and add to the bowl.
Depending on how much mayonnaise you like in your salad, this will determine how much mayo you are going to add. At our house we like our potato salad creamy so we aren’t shy with the mayonnaise. And we love that clear taste of sweet to so we aren’t shy with the pickles or the pickle juice.
Start with 1/2 cup of whole mayonnaise and with your spoon gently mix.
Now stop and taste it. No really taste it. Is it creamy enough? If not add another 1/2 cup. Continue to add mayo until it’s your liking.
Once your salad is the consistency you like gently add pickle juice by the tablespoon until your salad has reached the level of sweetness that is good for you.
Add salt and pepper to taste. (We love pepper so we go whole hog with the pepper shaker).
Cover your salad with plastic wrap and tuck it away for a few hours to let it chill and then serve.
This is always the first salad to go at every gathering. We also found that if you are serving something really spicy this salad helps to cool your mouth down!
