Addictive chicken salad.
Start by shredding rotisserie chickens. Place in a large bowl. Add half of the onions to the chicken, set aside.
Add olive oil to skillet on medium heat. To the oil add the remaining onions, minced garlic and rosemary. Saute until onions are opaque. Add the cooked onions/garlic/rosemary to the chicken. Then add mayonnaise; I’m not a big fan of mayo so I tend to make mine more on the dry side. Add salt and pepper to taste. Mix well.
