Description

This salad will make you want to smash large mugs of dark foamy beer together with your friends, listen to umpa music and cook up some nice fat bratwurst to accompany this. Try it – I promise you will like it….well I hope anyways.

Ingredients

  • 2 cups Sugar
  • ½ cups PLUS 1 Tbls. White Vinegar
  • ½ cups Vegetable Oil
  • 4 cups Well Drained Sauerkraut
  • 2 cups Chopped Celery
  • 1 cup Chopped Onion
  • 1 jar 4 Oz Diced Pimentos
  • 1 whole Smallish Green Pepper, Chopped
  • 1 Tablespoon Poppy Seeds
  • 1 Tablespoon Mustard Seed
  • ½ teaspoons Celery Seed

Preparation

In a saucepan, combine the sugar, vinegar and oil. Bring to a boil, stirring to dissolve the sugar completely. Set aside and cool.

In a large bowl combine the sauerkraut with all the remaining ingredients. Pour the cooled dressing over and mix well.

Cover and let stand in the frig for at least 2 hours – longer is better if you can. Enjoy!
