Olivie is a traditional Russian salad, pronounced o-li-v-yea. It is always present at family gatherings and parties. There is just no party without it.
Dice potatoes, carrots, eggs, pickles and bologna. Add salt and pepper to taste. Add peas. Mix. Add mayo and mix well. Refrigerate until you are ready to eat.
Note: To prepare potatoes, add unpeeled potatoes to a pot of cold water and bring to a boil. Add 1 tablespoon of salt, reduce heat to simmer and cook until potatoes are soft when pierced with a fork (about 15-20 minutes). Drain, rinse with cold water, and peel the skin off.
