This recipe for Loaded Ranch Baked Potato Salad is a great addition for a backyard bbq or summer holiday picnic. The perfect way to use up leftover baked potatoes by the addition of ranch, bacon bits, and cheese.
In a large pot, bring water to boil. Add diced potatoes and boil until tender. Drain and cool potatoes.
In a large bowl, combine cooled potatoes and bacon. In a separate bowl, mix mayonnaise, ranch dressing, sour cream, mustard, and cheese. Pour dressing over potatoes and toss to coat. Salt and pepper to taste. Chill until ready to serve.
