A great, cooling side dish with spicy foods.
Prepare quinoa according to package directions. Allow to cool to room temperature. Combine quinoa, herbs, cranberries, pecans, and scallions.
In a separate container, mix lemon juice, olive oil, and garlic salt. Stir into quinoa mixture. Add salt and pepper to taste.
Cover and refrigerate at least thirty minutes – several hours is better. Toss again before serving. If the salad seems dry, add additional olive oil.
