A delicious, simple potato salad. Just what you need to accompany summer BBQ or fried chicken!
Cook your potatoes in boiling, salted water to cover, about 15 minutes or until tender. While the potatoes are cooking, combine the vinegar and remaining ingredients. Go lightly on the salt, pepper and thyme, and add more to taste after you have dressed the potatoes.
Drain potatoes and cool. Cut into bite size pieces.
Pour the dressing over the potatoes and toss gently. Makes about 4 -6 servings.
