Instead of the ordinary summer salad, bring this kicked up potato salad with black olives, tomatoes, and red onions dressed with a wasabi dill mayo to your summer picnics and barbecues.
Slice your potatoes and next three ingredients.
In large pot, boil water. Add potatoes and cook until soft. Drain and set aside.
Mince the dill. Then in a small bowl, mix mayonnaise, wasabi, apple vinegar, olive oil, salt, pepper and fresh dill.
In large salad bowl, place the cherry tomatoes, red onion, black olives, and cooked potatoes.
Add dressing into your vegetables and mix well. Roughly chop parsley and add to salad.
