Polynesian Salad

Description
A sweet, light tropical chicken salad, topped with a sweet and savory pineapple vinaigrette.
Ingredients
- FOR THE SALAD:
- 4 cups Mixed Salad Greens
- 2 cups Cabbage, Shredded
- ⅔ cups Sweet Bell Pepper, Diced
- 4 Tablespoons Red Onion, Diced
- ⅔ cups Jicama, Peeled, Diced
- ⅔ cups Snap Peas, Diced
- ⅔ cups Mango, Peeled, Diced
- ⅔ cups Cucumber, Diced
- 8 ounces, weight Cooked And Diced Boneless, Skinless Chicken
- FOR THE DRESSING:
- ¼ cups Freshly Squeezed Orange Juice
- ¼ cups Diced Pineapple
- ¼ cups Rice Vinegar
- 1 teaspoon Garlic, Minced
- 1 teaspoon Dijon Mustard
Preparation
In a blender add all the ingredients for the dressing and process until smooth.
Divide all of the salad ingredients evenly onto two plates and top with dressing.
