This is great on green salads with an Asian flair. I like mine with grilled chicken, toasted almonds, red peppers, scallions and crispy wonton strips. Or how about grilled pinapple and macadamia nuts!
You can add a little soy sauce to make a great chicken marinade, drizzle it on fresh fruit to keep it from turning brown or create an Oriental coleslaw. Use your imagination!
Combine pineapple juice concentrate, vinegar, sugar and onion salt in a blender or jar with a tight fitting lid. Blend or shake until sugar is dissolved.
If using a blender, turn on medium low and slowly drizzle oil into the dressing.
If using a jar, add oil and shake until well combined.

Yum! I love fruity salad dressings… usually just use jam as a base… but this looks so good… can’t wait to make slaw.
