Description

A delicious cold salad made with fresh vegetables straight from the garden! Great as a side dish with any meal.

Ingredients

  • 2 Cans Niblets Corn (extra Sweet If Available) Or Fresh Corn, Drained
  • 3/4 Cup Cucumber, Peeled And Diced
  • 2 Small Tomatoes, Diced
  • 1/4 Cup Diced Onions
  • 1/4 Cup Sour Cream
  • 1/4 Teaspoon Mustard
  • 2 Tablespoons Mayonnaise
  • 1 Tablespoon Vinegar
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Celery Salt (optional)

Preparation

Stir together sour cream, mustard, mayo, vinegar and salt in a bowl. Toss corn, cucumber, tomatoes and onions with dressing. Chill well.

*I prefer to make this the morning that we’ll be having it. It lets the flavors get acquainted with each other.

*In a pinch you can make a yummy salad with these veggies and a little ranch dressing! Also delicious and much easier.
