An easy side dish that is one of my most requested recipes from my summer menus. You can add 2 cups of chopped chicken to serves as a main course. It is delicious!
Melt butter in a skillet. Add spice packet from ramen noodles and stir to combine; add crushed ramen noodles and saute until slightly browned. This will not take long, watch carefully. Remove from heat and allow to cool.
In a small container with a lid, combine sugar, olive oil, vinegar and fresh ground pepper to taste; shake well until sugar dissolves.
Put coleslaw mix in a large bowl, add peanuts and cooled ramen noodles, stir to combine. About 10 to 15 minutes before serving, pour dressing over everything and stir until well coated. It may appear as though there isn’t enough dressing, but there is plenty.
