Yellow mustard and sweet pickle relish is my favorite condiment combination, so I tweaked my potato salad recipe to suit it. This is a hit when I bring it places, and my family loves it, too!
Mix mayonaise, mustard, vinegar, salt and pepper in a large bowl. Add potatoes, celery, onion, and relish; toss. Stir in chopped, hard cooked eggs. Cover and refrigerate for a minimum of four hours, so flavors can blend.
