Mozzarella salad with sausage and tomatoes.
Peel or scrub baby potatoes. Boil in a pot for around 5 minutes. They should be tender and a bit soft when pierced with a fork. After potatoes have been boiling for about 5 minutes, add eggs. Boil eggs along with potatoes for about 4 1/2 to 5 minutes.
Sauté sausages for 10 minutes, until brown. Once done, set all cooked ingredients aside.
Wash greens, tear into big pieces and put in a bowl. Add halved cherry tomatoes. Add potatoes and mozzarella.
Slice eggs in half and arrange on top of salad. Season with salt and pepper and sprinkle with some chopped spring onions. Dress with olive oil and maybe some lemon or vinegar.
Note: Boil potatoes together with eggs tucked in tightly together. This way, the eggs have less of a chance to break!
