Description

Quick, simple, and refreshing salad or starter. Sweet and savory.

Ingredients

  • 1-½ pound Oranges
  • ½ cups Pitted Kalamata Olives
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Red Wine Vingegar
  • ½ teaspoons Garlic, Minced
  • 1 teaspoon Paprika
  • 1 pinch Cayenne Pepper (Optional)
  • Salt And Pepper, to taste
  • 2 Tablespoons Parsley, Chopped

Preparation

Supreme the oranges and slice or cut into bite sized pieces.

Chop olives (chopping optional) and put in a bowl with the oranges.

Blend olive oil, vinegar, garlic, paprika, cayenne pepper, salt ,and pepper and pour over the oranges and olives. Mix well.

At this point you can refrigerate for a few hours to allow the flavors to blend, or you can serve immediately. Add the parsley just before serving.
