Add fresh strawberries to your usual mixed greens and top them with this refreshing strawberry dressing.
For the salad:
Combine mixed greens, almonds, blue cheese and 2 cups strawberries in a large bowl and toss to combine. Set aside.
For the strawberry dressing:
Place 1 cup of strawberries in a food processor or blender; process a few times.
In a small bowl, combine balsamic vinegar, pepper, sugar and salt. Mix well and pour into the food processor with the strawberries. Process until pureed, stopping once or twice to scrape down the sides. Add oil and process until smooth.
Plate the salad mixture. Serve dressing with salad.
