Years ago, I enjoyed a traditional Shepherd’s Salad on a visit to Turkey. In my version, crisp veggies, salty feta, and tangy Kalamata olives come together for a cool and refreshing, picnic-perfect salad.
Toss all ingredients together. This can be made one day ahead of time; store covered in the refrigerator.

Sounds & looks lovely! I’m thinking this would also be excellent with some prosciutto, pancetta, ham, pepperoni or smoked turkey mixed in with the veggies. Sounds delightful, and I’ll be trying this soon!
