This simple chickpea salad is full of vegetables and topped with feta and dill.
Rinse chickpeas in a small colander and let drain for a few minutes while you prepare the next steps.
Mix olive oil, red wine vinegar, lemon juice, garlic, oregano and salt and pepper together to prepare vinaigrette. Set aside.
Add cucumber, tomatoes, red onion, red bell pepper and feta to a large salad bowl. Add in drained chickpeas. Pour vinaigrette on the top of the salad and gently stir in until well coated. Finish with fresh dill.
