Description

The texture of this chicken salad is the key -water chestnuts add a nice crunch & the grapes add a refreshing burst of sweetness. Sweet & savory is always a home run.

Ingredients

  • 3 cups Cooked Diced Chicken *or* Canned Chicken
  • 4 strips Bacon, cooked and crumbled
  • 1 can 8 Oz Sliced Water Chestnuts, Drained & Coarsly Chopped
  • 2 stalks Celery, Thinly Sliced
  • 1 cup Seedless Grapes, Halved
  • ¾ cups Mayonnaise
  • 2 Tablespoons Green Onion, Finely Minced
  • 1 Tablespoon Parsley, Fresh Or Dried
  • 1 teaspoon Lemon Juice
  • ¼ teaspoons Ground Ginger
  • 2 dashes Worcestershire Sauce
  • Salt And Pepper, To Taste

Preparation

Combine chicken, bacon, water chestnuts, celery & grapes in a large bowl & set aside.

In a small bowl, whisk together remaining ingredients.

Combine with chicken mixture, using as much or as little as necessary to moisten as desired.

You may add a little more mayo if you like a creamier salad.

Chill for at least an hour & stir again before serving.
