Light, bright, and oh so delicious.
Rinse quinoa in a strainer under cold water, then follow cooking instructions on package. Fluff and set aside.
Heat olive oil in a saucepan on medium heat, then add chopped onion. Saute until onions are cooked and browning a little. Turn off heat and add in kale. Toss to combine and allow heat to wilt kale.
Transfer vegetables to quinoa, then toss with lemon juice. Garnish with a lemon slice if desired and enjoy!
