I got this recipe from my neighbor, Kay, a few years ago. It’s one of my favorite ways to eat cucumbers. This clean, crisp salad is, for me, “summer in a bowl.”
Score (washed and unpeeled) cucumbers by running the tines of a fork down the sides. Slice them very thin and place them, along with the sliced onions (if using) in a deep bowl. Press down on the cucumbers with the palms of your hands to release some of the juices. Sprinkle with sugar, parsley and dill. Then toss the mixture and pour vinegar over the top. Let it sit at room temperature for 30 minutes, then press again. Juice should cover cucumbers. Cover and chill well before serving. Serves 4-6.

Growing up, there was always a large mason jar of these on the kitchen table, like it was part of the table! Ha ha. Your recipe brings back great memories, just LOVE these things!!
