Raw salad of kale, garbanzo beans and lemons. Healthy, refreshing, and can be made ahead.
1. Rinse garbanzo beans and chop the kale and parsley.
2. Toss ingredients together with olive oil, lemon and minced garlic.
3. Adjust seasoning to taste. Adjust lemon and olive oil as necessary. Chill in refrigerator at least 2 hours before serving.
4. Dress with cheese of choice before serving, if desired.
