A summer classic, perfect when the tomatoes are fresh. Add fresh basil, a little mozzarella, drizzle with balsamic, oh, man!
Slice tomatoes and mozzarella as thin as you can, arrange them on a place, alternating tomatoes, mozzarella, basil leaf, (repeat). Drizzle with vinaigrette. Oh, YES.
This is a great summer salad or a light lunch. But you need fresh tomatoes, preferably still screaming “my roots! my roots! I can’t feel my roots!”. That’s how you know they’re really fresh.
Serves 4 if they like it and 10 if they don’t.

Mmmm a quick and easy side dish great with summer meals especially when you have fresh picked ripe tomatoes.

I love the fresh-picked flavors in this salad! I’ve also made a roasted version with orange Sungold tomatoes on the vine.

This is my favorite salad. We actually had this with supper tonight. It is so pretty when you alternate red and yellow tomatoes.
