A fun twist on potato salad. This can be served hot OR cold. We prefer cold in the summer and hot in the winter.
1. Cut potatoes into bite sized pieces and boil until soft. I keep the skin on, but you could peel them if you don’t like the skin.
2. Cut bacon into small pieces and cook in a skillet until crisp.
3. Chop green onions.
4. Mix the cooked potatoes, crisp bacon, green onions, sour cream, mayo and ranch dressing mix. Serve right away if you want it hot or chill for several hours if you want to serve it cold.

Mmmmm! This stuff is SO good! This is the ONE recipe that caused me to finally break down and buy ranch dressing mix just so I could make it. I usually stay away from store-bought mixes and processed food, so that tells ya how much this recipe appealed to me- and it did NOT disappoint!

I had to join Tasty Kitchen so that I could RAVE about this salad! I was looking for the perfect potato salad recipe for Labor Day and knew this was it. And it was! YUM, YUM, YUM! Thanks for the recipe!
