The contrast between sweet pineapple, salty crackers and sharp cheddar is yummy!
Drain pineapple over a saucepan. Place fruit in an ovenproof dish. Add 3/4 cup butter, sugar and flour to the pineapple juice. Stir over medium high heat until thickened. Pour over the pineapple. Cover with cheddar cheese. Melt the remaining 2 tablespoons of butter and add to the Ritz crackers. Sprinkle crackers over the cheese. Bake for 30 minutes at 325 degrees until warm and bubbly!
