Savory and sweet! Makes a great picnic salad or vegetarian main dish!
The noted ‘Cook Time’ is to allow for cooking the rice.
In a large bowl, combine the cooked rice, green onions, almonds, cranberries and peas.
In a small bowl, thoroughly combine the vegetable oil, peanut butter, vinegars, soy sauce and sesame oil.
Stir the dressing into the rice mixture. Chill before serving, about 2 hours.
