It’s almost Labor Day and that means it’s hatch chile season! I’m taking one of my favorite peppers to make a spicy and light hatch chile corn salad that’s perfect for your backyard BBQ this weekend.
Begin by removing the husks from the ears of corn and cleaning the out the corn silk. Cut the kernels off each ear of corn.
Add red pepper and hatch chili pepper to the corn. Add feta. Give the mix a good stir to combine.
Top the corn mixture with cumin, lime juice and salt and pepper. Mix again to combine. Adjust seasoning as necessary and serve.
